Ancient grains of Sicily


All flours used during the course will be provided by Molino Crisafulli
The Craft Brewery which sponsors the event, will bring their beers to taste with presence of the Master brewer.

Dr. Gianfranco Venora :

Director of the Consortium Granicoltura Experimental Station for Sicily, at Caltagirone.
He treats a lesson on culture of ancient grains.
 Dr. Alfio Spina :

Researcher of CREA – Acireale, will treat the rheological and technological properties of grain population Sicilian and modern varieties.

The Master Adamo Sacco
He will address a lecture on methodologies and techniques of dough with ancient grains that will be proposed.
